Easy Creamy Tomato Soup

Needed a really quick dish for supper so I opened two cans of Trader Joe's whole tomatoes with basil and wizzed them up with the immersion blender. NOTE: Do not lift the blender up while blending - very messy. In the meantime I carmelized 1/4 of a red onion. After the onion was done I added it to the tomatoes along with some coarse salt, pepper, and garlic salt. I let the soup simmer for about 20 minutes or so. Added some heavy cream at the end and cooked just until cream was heated. Added some dice blue cheese just before serving - yummy. A perfect fall soup. Would be delicious with toasted croutons on top.

Chicken Enchiladas with Carrots

I had some leftover chicken, pinto beans, and tomato soup and wanted to make something quick for supper. So I put the Easy Creamy Tomato soup (see recipe) in the bottom of the casserole dish - about one half cup. I put four 6" tortillas on the counter and spread grated carrot, shredded chicken, and my beans on each of the tortillas. Then rolled them up and put seam side down in the baking dish. I spread 1/2 can of green enchilada sauce all over the top and then added shredded pepper jack cheese. Baked with foil for about 15 min at 350 and then approx. 10 more minutes without the foil.
